DESCRIPTIONUlrich Hoffmann, has been a winemaker and consultant for 15 years, working all around the world but primarily in Italy as a consultant. He may have continued with his travels had he not fallen in love with both the Sussex countryside and his now wife, Birgit Rathbone.
After a long, long-distance relationship they have now combined passions and created a boutique sparkling winery that is exclusively focused on quality. The grapes are sourced from the local Sussex region, where the cool climate is perfectly suited to growing the traditional Champagne varietals of Pinot Noir, Chardonnay and Pinot Meunier. The wines spend at least three years maturing in bottle on lees, and nothing is released until it is ready.
Salmon pink with a soft, fine mousse and persistent effervescence. Notes of strawberry, red fruits, peach, nectarine and a touch of rose petals. A lovely fruity persistence, a bright, lemony finish, and fresh acidity. These are wines with real finesse, delicious to drink now but with definite ageing potential.
Pair with freshly shucked oysters or a beautiful lemon Dover sole - delicious!
